Pineapple Jello Rings – Vintage Lime Gelatin with Cherries

🍍 Ingredients

  • 2 cans (20 oz each) pineapple rings in juice

  • 1 (6 oz) box lime Jello gelatin

  • Maraschino cherries (no stems)

  • Optional garnishes:

    • Whipped cream

    • Shredded coconut

    • Fresh strawberries

🍒 Instructions

1. Prep the Cans:

Open each can of pineapple just enough to drain the juice. Keep the rings in the can.

2. Make the Gelatin:

In a large mixing bowl, prepare the lime Jello according to the package instructions using boiling water.

3. Fill the Cans:

Gently pour the prepared gelatin into each can, covering the pineapple rings. Add 2–3 maraschino cherries (no stems) into each can as you go.

4. Chill:

Refrigerate the filled cans for at least 4 hours, until the gelatin is set.

5. Unmold & Slice:

Carefully open the bottom of the cans and gently push out the set pineapple-and-Jello log. Slice to reveal beautifully layered pineapple Jello rings. Enjoy!
