Inspired by a vintage recipe: A Tasty Pineapple Recipe From the 50s!
This pineapple chicken recipe was actually inspired by the pineapple pork recipe from Marco Liang's Romance of Chinese Cooking (1953) whose book is a wonderful source for recipes.
This is an easy battered and fried Chinese style pineapple chicken recipe where I substituted chicken for pork and left out the carrots in my dish. The original 1953 recipe is at the bottom of the post for reference.

Pineapple Chicken

✨ Ingredients
- 1 lb. chicken filets or chicken breasts
- ½ green bell pepper
- 1 tomato
- 1 small can pineapple chunks
- 2 cups pineapple juice
- ⅓ cup sugar
- 3 teaspoons white wine vinegar
- 2 tablespoons cornstarch
- 1–2 cups vegetable oil
✨ Instructions
Chop chicken into 1-inch pieces.
Make the batter in a medium bowl, then dip chicken pieces to coat evenly.
Heat oil to 350°F in a large skillet.
Deep fry the battered chicken pieces until golden brown and cooked through.
Remove and place on a paper towel-lined plate.
Chop the bell pepper and tomato into small, cubed pieces.
In a medium pot, combine pineapple chunks, pineapple juice, sugar, vinegar, bell pepper, and tomato.
Bring to a boil, then stir in cornstarch and immediately remove from heat.
Stir until thickened. If sauce is too thin, add a bit more cornstarch.
Serve the crispy chicken topped with the sweet pineapple sauce over steamed or fried rice.
