A Late-Spring Friday in 1969

Friday, May 30, 1969 – Date Night

I hadn’t planned on going out tonight. The paper was folded on the counter all afternoon, movie listings circled without meaning much of anything. By the time Jimmy called, the apartment was already tidy and the dessert was in the refrigerator, setting the way it’s supposed to.

He wanted to go see that new movie the one everyone keeps mentioning, like they aren’t quite sure what they’re allowed to say about it yet. I said yes before I could talk myself out of it.

Jimmy showed up on the motorcycle as usual his Honda, a little noisy, a little plain. He handed me a white helmet like it was a rule. I put it on without arguing. It smelled faintly like gasoline and soap. I didn’t love the way it looked, but I liked that he cared enough to insist.

The ride was short to the Eastland Theatre. I kept my hands still and my thoughts quieter than usual.

The movie Midnight Cowboy was strange and sad in a way that lingered. Jimmy didn’t say much afterward. That surprised me. I watched his face in the theater light and wondered what he was thinking, if anything. When we stepped outside, the night felt warm but unsettled.

I told him we could come back here.

The strawberry pretzel dessert had set perfectly. I was glad I’d made it earlier, like Mother says: whip it, chill it, serve it pretty. We had drinks at the table, nothing fancy, and ate dessert with our forks resting on paper napkins. Jimmy liked it more than he should have. He said so twice. That made me laugh.

There’s something very 1950s about him, even now. The way he leans instead of sits. The way he thinks movement counts as direction. He’s fun in a way that doesn’t ask much of me, and I suppose that’s what I wanted tonight.

I know he isn’t who I’ll marry. I knew that even while he was still here. But some evenings don’t need to be permanent to matter.

After he left, I put the leftover dessert back in the refrigerator and washed the glasses. The apartment felt like mine again.


Strawberry Pretzel Dessert After the Movies

Serves: 12
Pan: 8x8-inch baking dish
Chill Time: At least 4 hours (overnight preferred)

Ingredients

Pretzel Crust

  • 4 cups crushed pretzels

  • 1 tablespoon sugar

  • ½ cup butter, melted

Cream Cheese Layer

  • 1 (8-ounce) package cream cheese, softened

  • 1/2 cup sugar

  • 1 medium container Cool Whip

Strawberry Jell-O Layer

  • 1 large box strawberry Jell-O

  • 2 cups boiling water

  • 1/2 cup chopped frozen strawberries

Instructions

1. Make the Strawberry Jell-O Layer

In a large bowl, dissolve box of strawberry Jell-O in 2 cups boiling water, stirring until completely dissolved.

Add chopped frozen strawberries Stir gently.

Let the mixture sit at room temperature until it cools and begins to slightly thicken.
(It should be cool to the touch but not set.)

2. Make the Pretzel Crust

Preheat oven to 350°F.

In a bowl, mix the crushed pretzels, 1 tablespoon sugar, and melted butter until evenly combined.
Press firmly into the bottom of a 8x8-inch pan.

Bake for 8 minutes.
Remove from oven and let cool completely. ( you can set it fridge to firm up)

2. Prepare the Cream Cheese Layer

In a mixing bowl, beat the softened cream cheese and 1/2 sugar until smooth and creamy.

Fold in the Cool Whip until fully combined.

Spread this mixture evenly over the cooled pretzel crust, making sure to seal the edges so the Jell-O layer doesn’t seep through.

Refrigerate if you are waiting on jello to cool

4. Assemble & Chill

Carefully pour the cooled Jell-O and strawberry mixture over the cream cheese layer.

Refrigerate until fully set, at least 4 hours or overnight for best results.

To Serve

Cut into squares and serve chilled.
