The combination of ingredients and some technique is what makes this recipe unique and creates a delicious, buttery waffle.

Her recipe is believed to have originated from a family friend in Virginia.

This vintage recipe was for a simple, quick and easy to make breakfast treat consisting of eggs, cake flour, sugar, buttermilk and butter.

I followed the recipe pretty closely using buttermilk.

The batter is poured into a waffle iron and cooked until it is golden brown.

Enjoy them as soon as they come out of the waffle iron with your favorite toppings.

Makes 3 large waffles

Ingredients

  • 1/2 cup butter

  • 1 tablespoon sugar

  • 2 egg yolks

  • 7/8 cup milk or 1 cup buttermilk

  • 1 cup + 1 tablespoon sifted cake flour

  • 1 pinch salt

  • 2 stiff beaten egg whites

  • 4 teaspoons baking powder

Notes on Ingredients

Stiff Egg Whites:
Stiff egg whites are beaten until they form glossy peaks that hold their shape when the beaters are lifted. This technique helps create light, fluffy waffles with a tender texture.

Cake Flour I Used:
King Arthur Unbleached Cake Flour

Directions

  1. Cream the butter and sugar together. Add the egg yolks and beat well.

  2. Add the flour and milk alternately, mixing until combined. This mixture may be prepared ahead of time if desired.

  3. When ready to bake, fold in the stiff beaten egg whites and baking powder.

  4. The batter should be thick and fluffy.

  5. Pour into a preheated waffle iron and cook until golden brown, about 4–5 minutes depending on your waffle maker.

  6. Serve hot with maple syrup.

Testing Notes

These waffles are incredibly flavorful and rich, thanks to the generous amount of butter in the batter.

I found they didn’t need any extra butter on top before serving.

The waffles cook up beautifully golden with crisp edges and a soft, fluffy interior.

The buttermilk variation gives them an especially tender texture and classic old-fashioned flavor.

I would give this recipe 3 ½ stars out of 5 they are easy to make very tasty, but they are very buttery.
