The Invitation

Monday, June 2, 1975
West Covina, California

Today something unexpected happened.

When I stepped outside this afternoon, there was a beautiful little invitation sitting on our doorstep. For a moment I thought perhaps one of the neighbors was inviting Greg and me to a cocktail party. I even wondered if we'd have to find a babysitter for Caroline.

I made myself a cup of coffee before opening it. Silly, I know, but I was nervous. We've only lived on the cul-de-sac a short while.

When I finally opened the envelope, I couldn't help but smile.

It wasn't for us at all.

It was for Caroline.

Our little two-year-old has been invited to the birthday party of the ten-year-old girl who lives next door. Her very first neighborhood party!

Then I reached the back of the invitation...

Potluck.

Oh dear.

My mind immediately went to Mother's lime Jell-O fluff. She took it to every church supper and family gathering, but somehow it didn't feel quite right for a backyard birthday filled with children.

No... Caroline's first party deserved something a little more special.

Then it came to me.

Cherry cheesecake fluff.

The prettiest shade of pink, folded together with cherries and whipped topping, served in my amber glass bowl with crushed graham crackers sprinkled over the top. A little whipped cream and a bright red maraschino cherry on each serving.

I could just picture the menu.

Party Menu

Start with 🍒 A Marachinno Cherry Fluff Recipe

The bright pink party favorite everyone scooped onto their paper plate.

Diane's Marachinno Cherry Cheesecake Fluff Recipe

Servings: 6–8

Ingredients

  • 1 (3-ounce) package cherry gelatin

  • 1 cup boiling water

  • 1 (8-ounce) tub whipped topping, thawed

  • 5 ounces cream cheese, softened

  • ½ cup maraschino cherries, pureed

  • 1 tablespoon maraschino cherry juice

  • ¼ teaspoon almond extract

Instructions

  1. Place the softened cream cheese on the counter about 30 minutes before you begin so it reaches room temperature.

  2. In a small saucepan or heatproof bowl, dissolve the cherry gelatin completely in 1 cup of boiling water.

  3. Refrigerate the gelatin for about 45 minutes, or until it reaches the consistency of pudding. It should be thickened but not fully set.

  4. In a large mixing bowl, beat the softened cream cheese until smooth.

  5. Add the thickened gelatin, almond extract, pureed maraschino cherries, and maraschino cherry juice. Mix until smooth and well combined.

  6. Gently fold in the thawed whipped topping until no streaks remain.

  7. Spoon into individual dessert dishes or a serving bowl.

  8. Refrigerate for at least 2 hours before serving.

From The Blue Kitchen

As the afternoon came to an end, the last balloons bobbed gently in the warm June breeze, wrapping paper covered the grass, and five happy children headed home with party favors in hand. I thought back to what a wonderful first neighborhood birthday party it had been for Caroline.
